The days are getting shorter and as we are facing colder temperatures we surely are craving those comfort foods. But they don’t have to be bad for you. Try these yummy and Good-For-You delicious oatmeal pancakes. I like them topped with almond butter and apple sauce, sprinkled with maple flakes. But you can come up with any topping you like, maple syrup, bananas, fresh berries or berry compote. Be creative and enjoy!
Delicious Oatmeal Pancakes
½ apple, cored
½ cup porridge oats or rolled oats
½ cup liquid egg whites or 4 “real” egg whites
½ cup spring-water
1 tsp baking powder
1 tbsp oat bran
1 tsp psyllium husk
Cinnamon to taste
1. Cut apple into chunks, put in blender or food processor with all other ingredients. Blend for 1-2 minutes or until consistency of pancake batter is reached. You may need to add more water depending on how thick you like your batter to be, the psyllium soaks up a lot of liquid.
2. Spray frying pan with Pam Professional High Heat cooking spray. Use small ladle to pour batter into frying pan. You should get 2 batches of three pancakes each out of this recipe.
3. Enjoy with Almond Butter, E.D. Smith Low Cal Syrup, real maple syrup, or applesauce.
